A cast iron pot on the campfire, gas ring or stovetop just tastes better; if you don't have one, use a thick-bottomed saucepan or electric slow cooker. Traditional Dutch Ovens are still to become popular in Australia but are widespread on the African Continent, sometimes called Potjie Pots (pronounced Poi-Kei). This present day version is made of finely cast and fully pre-seasoned cast iron. The rounded, potbellied pots are used for cooking tender stews as they allow steam to circulate instead of escaping through the lid, retaining the healthy goodness. The flat-bottomed Australian Camp Ovens heat more quickly and are preferred to bake crusty loaves of bread but can be used for all these recipes.
